Glazed Lemon Pound Cake

I love having something to snack on about the house and my roommate was playing Portal; hence Cake.

The recipe I used was:

1 cup Butter

1/4 cup vegetable oil

3 cups Sugar

5 Eggs

3 cup Flour

1 cup Milk

1 teaspoon Lemon Extract

For the Glaze:

1/2 cup Sugar

1/2 cup Water

1 tea spoon Lemon Zest

1/4 cup Lemon Juice

Beat butter and oil in a large bowl, slowly adding sugar and eggs. Alternate adding flour and milk until the mixture is complete, well blended and uniform. Stir in the lemon extract and pour the batter into a good pan.

I didn’t have a bundt pan, but didn’t have as many problems as I had feared. Grease & flour the pan well, otherwise a good portion of the Pound Cake will stick. I baked at 300′ for about 2 hours, until the center was fully cooked.

The glaze wasn’t thick enough, but once it dried out a bit, added a wonderful flavor to the outside of the cake.

To improve for next time: I need a bundt pan, thicker glaze and a little more pan preparation to ensure nothing sticks.

The flavor and consistency was wonderful, that could not have been improved in the slightest. Yum. Just don’t think about all the sugar and butter as you eat it!
