Seafood is cheap, fresh and readily available in Pensacola with just a little bit of pre-planning and I intend to abuse it. Joe Patti’s had impressive looking salmon and I a wasabi and ginger theme. I really wanted sushi but this was the best alternative that I could reasonably prepare!
The Glaze

I can see the future in the wasabi patterns...
2 tablespoons White Wine/Sake
1 tablespoon Sugar (Or, instead of Wine/Sake and sugar, 3 tbs, Miren
1 tablespoon Vinegar
1 tablespoon Soy Sauce
1 tablespoon Honey
1 tablespoon fresh ginger
2 teaspoons of wasabi paste, or to taste
Combine all ingredients together, bring to a boil then lower the heat. In a few minutes, the consistency should thicken. I was careless and turned the glaze into a sort of wasabi candy. It was harder to pour but just as good.
The Salmon
Lightly coat a pan in oil and cook the salmon until browned & slightly crispy on the outside with an opaque center. Or, cook at a medium setting for about 5 minutes per side.
Pour the cooled sauce over the salmon and profit.
I absolutely liked the texture of the salmon, but the glaze reduced for too long and was too thick to pour properly. This took ~25 minutes to make.
I love salmon so much, though it is hard to get any for a reasonable price around here! I will definitely try this next time I get my hands on some.
I bet it would taste awesome grilled too.
Just think of the salmon as ~eating out and try grilling it anyway, it’s almost like saving money if make a funny face and think just as hard as you can! It’s what I did. XD
