if you are having trouble searing it start with a smoking hot pan (literally) pull off heat after smokes just starts to form. add fish and return to HIGH heat after 2-3 minutes remove from pan and place on lined sheet pan seared side up and bake for 5-7 minutes in 350ish oven it lets you move more fish and sear it perfectly without worrying about overcooking.

Great recipe! We had it tonight, and we included sliced red bell pepper with the onion, garlic, and basil. Before adding the fish, I dipped it in cornmeal. I had rinsed the fish and allowed it to drip dry a few seconds. So it was damp and that helped the cornmeal to stick. It was just a little coating, and it made a really nice crispy outside layer. I added the white wine after it had a chance to fry a little first. My swai needed a few extra minutes (maybe it was slightly thicker or not entirely thawed when I started), about 3 extra minues. I served it with a romaine salad and steamed sweet potato. Delicious! Thanks for the recipe!

I love me some butternut squash soup! :D This is great, I love the little cream swirl too. We were getting a ton of butternut squash in our CSA this season, so we made soup a couple times with pretty much the same recipe as yours <3 It's so easy and delicious.

Brussels sprouts are gross because they are in the cabbage family! That's my reason, anyway. There's also this: http://www.sciencedaily.com/releases/2005/02/050223163830.htm which I guess should apply to more foods than just Brussels sprouts -- for example, the whole "cilantro tastes like soap to some people". I hate cilantro, but it doesn't taste like soap to me.

Anyway, I have been able to convince myself to eat Brussels sprouts on occasion, and some of your recipes are new to me, so maybe I will have to try again. I suspect they are good for me.

WHY ARE THEY CALLED "BRUSSELS SPROUTS" THAT PHRASE NOW LOOKS WEIRD AND WRONG TO ME.
